Hey guys,
So as promised, I am going to start posting my food. As a vegetarian, it is quite easy to fall into the traps f making boring food where you just replace the meat with a cucumber :( Also at university it is quite easy to result to a tin of beans or deliveroo.
I am going to help you change that. Here is a quick easy low carb, vegan recipe.
Ingredients:
- 1 plantain
- 1 spring onion
- 1 small red onion
- handful of spinach
- head of broccoli
- quorn pieces (vegan options available in store)
- soy sauce
- seasonings of choice (but please use seasoning guys)
- hoisin sauce
- olive oil
- spray oil
- garlic clove
- 1 bell pepper
Method:
Plantain
- Peel and slice plantain to desired shape
- Sprinkle a pinch of salt onto the slices
- Fry in a pan with oil until brown
- Move into a flat plate with kitchen towel paper to remove excess oil
Broccoli
- Cut a few pieces of broccoli of from the head and boil for about 3-5 mins.
- While boiling, dice the garlic and red onion.
- Pour enough soy sauce to over the base of the pan and then put the garlic and onion in.
- Season to taste.
- When the broccoli is done, put it into the pan and cover with foil for 3 mins.
- Remove broccoli from the pan and place on plate.
- Optional: pour a little of the left over sauce onto the broccoli.
Peppers
- Cut the peppers and transfer them to the pan used for the broccoli.
- Put a handful of spinach into the pan and pour a couple table spoons of water into the pan and season to taste.
- Cover the pan.
- Once the spinach has gotten soft, stir and then transfer to plate.
Quorn Pieces
- Boil desired amount of quorn pieces for about 5 mins.
- Drain water and spray oil to a pan.
- Place the quorn into the pan and some diced onion.
- Pour some hoisin sauce and season to taste.
- Stir and let fry for 3 mins.
- Transfer to place.
Spring onion
- Slice spring onion and spread over the plate.
